Ingredients:
For the Marinade:
250g paneer, cut into cubes
1 cup thick yogurt/dahi
1 tablespoon ginger-garlic paste
1 tablespoon red chili powder
1 tablespoon coriander powder
1 tablespoon garam masala
1 tablespoon chaat masala
1 tablespoon lemon juice
Salt to taste
2 tablespoons vegetable oil
For the Skewers:
Capsicums, onions, and tomatoes (cut into cubes)
For Basting (optional):
2 tablespoons melted butter
Instructions:
Marinating the Paneer:
In a large bowl, mix together yogurt, ginger-garlic paste, red chili powder, coriander powder, garam masala, chaat masala, lemon juice, salt, and vegetable oil.
Adding Paneer:
Add the paneer cubes to the marinade, ensuring they are well-coated. Cover the bowl and let it marinate for at least 1-2 hours in the refrigerator. Longer marination imparts more flavour.
Prepping the Skewers:
Preheat your grill or oven to a high temperature.
Thread marinated paneer, bell peppers, onions, and cherry tomatoes onto skewers, alternating them for a colourful presentation.
Grilling or Baking:
Grill the skewers for about 10-15 minutes, turning occasionally, until the paneer is golden brown and has a slightly charred appearance. Alternatively, you can bake them in a preheated oven at 200°C (392°F) for about 20-25 minutes.
Basting (Optional):
If desired, you can baste the paneer with melted butter during the grilling or baking process for added flavour and moisture.
Serving:
Once cooked, remove the skewers from the grill or oven.
Serve the paneer tikka hot with mint chutney, tamarind sauce, or a squeeze of lemon. Garnish with slice of onion ring and fresh coriander.
