Ingredients of Mutton Paya:
- 4-6 lamb Paya/trotters (cleaned and split)
- 1 cup chopped onions
- 2 tablespoons ginger-garlic paste
- 1/2 cup cooking oil or ghee
- turmeric powder 1 teaspoon
- red chili powder 1 tablespoon (adjust to taste)
- coriander powder 1 tablespoon
- 1 tablespoon Cumin powder
- 1 tablespoon garam masala powder
- Pinch of nutmeg
- Whole spices (Bay leave, Green and Black Cardamom, Cloves, Star Anise, Cinnamon Stick, Mace)
- Salt to taste
- Water for cooking
- Chopped fresh coriander leaves for garnish
Step by Step Cooking Process:
Clean the lamb trotters thoroughly.
Add sliced onion and ginger, garlic paste in it.
Now, add all the powder and whole spices in it.
Add oil or ghee, adjust salt as per your taste and put 1/2 cup of water and pressure cook for 2-3 whistle.
Now, Cook till oil separated from spices and ginger, garlic paste cooked properly.
